Sollte kühl serviert werden, bei 10°C. Begleiten Sie ihn zu fetthaltigen Gerichten wie Spaghetti Carbonara, da die Säure das Fett neutralisiert. Probieren Sie ihn zu gebratenem Fisch wie Kabeljau oder Wolfsbarsch im Ofen.

Klassische Weißweinbereitung mit Gärung in Edelstahltanks bei niedriger Temperatur (18°C). Er wurde 1 Jahr lang in der Flasche ausgebaut.

Gesamtschwefelgehalt : 126 mg/l
pH-Wert : 3.04
Er kann bis zu 5 Jahre gelagert werden. Mit der Zeit entwickelt er sich sehr interessant. Frische Zitrusaromen verwandeln sich in verschiedene und komplexe Aromen wie geröstete Nüsse, geröstetes Brot, erdige und metallische Aromen.

I am increasingly encountering excellent Assyrtiko wines outside Santorini—without, of course, calling into question the grandeur of the island’s top examples. Up to a point, this wine belongs in that category as well. Ripe, concentrated, and packed with fruit, it is genuinely very enjoyable. Lush, flavorful, and finishing well, it shows balanced intensity. It will also be interesting to see how it develops over time. That is where my small reservation lies: it carries a smoky note that could have been avoided, perhaps a touch of reduction. This diminished as the wine aerated and warmed. If it disappears entirely, as often happens, the wine would merit an even higher rating. Even as it stands, however, it is very good. |
