Organic wine

Organic wine begins in the vineyard. It refers to grapes grown without synthetic pesticides, herbicides, or chemical fertilizers, following certified agricultural standards. At its core, organic viticulture prioritizes soil health, biodiversity, and environmental responsibility. Since 2012 the EU introduced the term organic wine, which refers to wine from organic grapes, with lower limits of additives, including sulphur. All privately owned vineyards of Douloufakis winery are certified organic.

Biodynamic wine

Biodynamic wine builds on organic principles, but extends them into a holistic farming philosophy. Inspired by the teachings of Rudolf Steiner, biodynamic vineyards are treated as self-sustaining ecosystems, integrating composting, biodiversity, and even lunar cycles into farming decisions. While often seen as more esoteric, biodynamics ultimately seeks to create deeper harmony between vine, soil, and environment.

Vegan wine

Vegan wine addresses a lesser-known aspect of winemaking: fining. Although wine is made from grapes, many producers use animal-derived agents such as egg whites, casein (milk protein), or isinglass (fish bladder protein) to clarify and stabilize the wine. Vegan wines avoid these materials, instead using plant-based or mineral alternatives like bentonite clay or pea protein. The result is not necessarily a difference in taste, but a shift in production ethics and transparency. In Douloufakis winery we don’t use any animal derived fining agents.

Natural wine

Natural wine is perhaps the most debated category—and the least formally defined. Unlike organic or biodynamic wine, “natural” has no universal certification. Broadly, it refers to wines made with minimal intervention: organically or biodynamically farmed grapes, native yeast fermentation, little to no additives, and often no filtration or fining. wine express its This can result in wines that feel vibrant and alive—but often also unpredictable, cloudy, or unconventional in style
