Vinification for Vidiano and Liatiko by Douloufakis Winery
Each wine we produced this year from Vidiano and Liatiko grapes, gives us a great satisfaction and makes us feel fulfilled. We succeeded in this result by paying attention to every little detail, from the vineyard till the winemaking.
We strongly believe that wine quality directly results from the vineyard growing process. We concluded that both Vidiano and Liatiko yields very well on drought conditions and in soils medium in nutrients, calcareous, on well drained hills. These two varieties thrive in Dafnes region on the clay-calcareous slopes.

We produce three different wines from Vidiano grapes.
"Dafnios White", a wine fermented in stainless steel tanks. For its production this year we applied intense quality control on grapes, coming from new and old vineyards.
"Aspros Lagos" (white rabbit), is produced from Vidiano grapes of the homonymous vineyards as every year. We have already begun the Batonnage, that is, the process of stirring the fine lees back up into the wine, at intervals. Until February 2020, it will have been matured for 5 months in oak and acacia barrels. For Vidiano Sparkling wine, the harvest time plays an important role. This year the harvest took place on 19th of September, featuring Baume 11 (contents of grape sugar), lively acidity 9 and low pH 3.1, that enables its aging.
"Amphora Vidiano" was produced from overripe grapes. It is still remaining in clay amphoras (Cretan jars: pithoi) for long extraction while the separation from its solid parts will be done after 2 months. After that the wine will remain in the amphoras, on its lees for 3 months and in stainless steel tanks 4 more months for natural clarification.
"Dafnios Red" is produced from Liatiko. This year we harvested for first time a vineyard that its vines came from clonal selection of Liatiko variety with specific traits of deeper red color and intense aroma. That Liatiko wine has been extracted for 30 days.
Finally, for "Amphora Liatiko" we used perfect grapes from a traditional 30-year-old vineyard, that had an extremely low yield and we’ll apply the same winemaking technique described above in "Amphora Vidiano" (long extraction in the amphora, etc.).
